To get started, you will need
For the chicken shawarma:
2 pounds boneless chicken breast or thighs
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon ground cardamom
1 teaspoon ground turmeric
1/2 teaspoon ground cayenne pepper
1 tablespoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 1/2 teaspoon kosher salt
1/4 teaspoon ground black pepper
2 tablespoon lemon juice
3 tablespoon olive oil
For the tahini sauce:
2 tablespoon tahini paste
2 tablespoon olive oil
3 tablespoon water
1 tablespoon lemon juice
1 clove garlic, minced
1/2 teaspoon kosher salt, more to taste if desired
Now let’s get cooking!
For the chicken shawarma:
- Combine all dry ingredients well.
- Combine the rest of the ingredients.
- Add in the Chicken, rub the marinade and coat completely to the Chicken.
- Marinate between 2-6 hours
- After the marination, cook the chicken in a preheated grill (260 deg C) for 3-4 minutes on all sides.
- Rest the cooked chicken
For the tahini sauce:
- Combine tahini sauce ingredients and mix well.
